- 1 1/2 tablespoons canola oil
- 1 pound stew beef or turkey breast, cut into bite sized cubes
- 2 1/2 tablespoons chili powder
- 1 tablespoon cumin
- 2 1/2 tablespoons flour
- 1 large onion, chopped
- 2 to 3 cloves garlic, minced or crushed
- 1 medium green or red bell pepper, chopped
- 1/4 cup chopped fresh parsley
- 16-ounce can black beans, drained and rinsed
- 16-ounce can red kidney beans, drained and rinsed
- 28-ounce can diced tomatoes
- 1 1/2 cups beef broth
- 1/4 cup barbecue sauce
- 1 1/2 tablespoons brown sugar
- 3/4 teaspoon salt
Method
- Heat the oil in a large skillet then add the meat to brown, stirring often. Add chili powder and cumin then stir in the flour and let the mixture cook for an additional minute.
- Transfer to a slow cooker then add the remaining ingredients, stir well. Let the mixture cook for 6 to 8 hours on the low setting, stirring occasionally.
